The Management of Quality is to arrange and manage services that can satisfy the customer. Formerly the determination of the quality of a product is more emphasis on testing of the product ready for the market, known as 'the final stage inspection'. The system has various drawbacks, such as:

- If at the time of testing is known that the resulting product does not meet the demand of consumers, the losses are already large. Being very expensive refused products at the end point of a cycle.

-In the marketing process will be difficult to predict the appearance of the product creation process, if history is unknown.

-The production process is typically driven by the traditions / customs not by the actual market demand.

In quality management, the achievement of quality in accordance with customer demand made ​​in the production and marketing process. Thus the quality of the end is predictable from the start, so there will be no rejection of the inspection at the end of the cycle. The system also provides the consumer a document that indicates that the products they buy are produced in accordance with the agreed terms. Thus, quality management have multiple functions:

- As a marketing tool to achieve repeat sales (because consumers are satisfied).
- Tools to improve productivity: identify problems, prevent errors and reduce inefficiency.
- Assisting farmers to enter the market with quarantine barriers and other obstacles.
- Increasing trust and good cooperation in the marketing chain.

Quality management principles:
- Consumers who define the quality, not the manufacturer.
- Quality management should be planned, organized and managed, does not happen by itself.
- Problems must be identified at the earliest possible stage, not at the final stage.
- Everyone who worked on this system, including the workers, responsible for quality management, not just the responsibility of the manager.
- To implement an effective quality management system, produksen requires commitment, good planning, employee engagement and document / records are good.
- All relevant activities should be recorded and can be audited by the consumer.
- There auditing process conducted internally and by consumers.

There are several levels of quality management that can be applied in the fruit supply chain. Each level has a hassle, financing, and management skills of different degree.
